    Knead the flour with a little oil, salt and water into a firm dough, then rest for 20 minutes.

    Boil and mash the potatoes, then cook with peas, cumin, ginger, green chilli and garam masala.

    Roll the dough into ovals, cut in half, and shape each half into a cone.

  4. 4

    Fill each cone with the potato mixture and seal the edges with water.

  5. 5

    Deep fry on medium heat until golden and crisp, then drain and serve hot.
