Cook rice ahead of time and cool completely so the grains stay separate when fried.

Heat oil in a wok, stir-fry the chicken until cooked through, then set aside.

In the same wok, stir-fry garlic, carrot and capsicum on high heat for 2 minutes.

Add the rice, chicken, soy sauce, salt and pepper, tossing constantly on high heat.

Finish with chopped spring onion before serving.
