Chole (Chana Masala)

Soak chickpeas overnight, then pressure cook with a tea bag (for color) and salt until soft.

Heat oil and sauté onion until deep golden brown.

Add ginger garlic paste and tomatoes, cooking until the masala base thickens.

Stir in chole masala and amchur powder, then add the cooked chickpeas with their stock.

Simmer for 15-20 minutes, mashing a few chickpeas to thicken the gravy.

Garnish with coriander leaves before serving.
