    Cook rice ahead of time and cool completely so the grains stay separate.

    Heat oil, crackle mustard seeds, then fry peanuts until golden.

    Add curry leaves, green chillies and turmeric powder, stirring briefly.

    Add the cooked rice and salt, tossing gently to coat evenly with the tempering.

    Remove from heat, stir in lemon juice, and serve warm.
