    Cook the penne in salted boiling water until al dente, then reserve a cup of pasta water.

    Heat olive oil and gently fry sliced garlic and crushed dried red chillies until fragrant.

    Add the crushed tomatoes, salt and pepper, and simmer for 10 minutes.

    Toss the cooked pasta into the sauce, loosening with a splash of pasta water if needed.

    Finish with torn basil leaves and grated parmesan before serving.
